mmmm...Red velvet cake


Here is my new favorite recipe...
Blue Ribbon Winning Red Velvet Cake.
I have made this twice and it gets rave reviews each time!! It really is an amazing recipe!! Enjoy...
Ingredients:

2 1/2 cups of plain sifted flour
1 cup of buttermilk
1 1/2 cup sugar
2 cups Crisco oil
1 tsp baking soda
1 tsp salt
1 tsp vinegar
1 tsp cocoa
1 tsp vanilla
2 oz of red food coloring
2 eggs

Preheat oven to 350 degrees
Cream the sugar, oil, and eggs
Sift together the flour, salt and baking soda and set it aside
mix together in a glass bowl food coloring ,vinegar and cocoa
add this mixture and vanilla to the creamed sugar, oil and egg mixture
once this is mixed well begin to add sifted flour to this mixture,
alternating with the buttermilk until all is incorporated.

Pour batter into 2 nonstick 9" round pans evenly
Bake for 30-35 minutes
Allow layers to fully cool before icing...enjoy!!!
*(the picture has three layers you could do that if you have another pan
just make sure batter is dispersed evenly and add icing betwwen all layers!)

Icing

1 stick of butter (softened)
1 box of confectioners sugar
1 8 oz pack of cream cheese
1 tsp vanilla
Mix all ingredients together until creamy and smooth.
